2 cups oats 2 cups coconut 1 cup granola 1 cup cake flour ½ cup brown sugar 4 tbsp honey 250g butter 2 tsp baking soda (Bicarb) pinch salt 1 large free range egg
Method: • Preheat oven to 170ºC. Mix all dry ingredients together in a mixing bowl. • Melt butter in microwave on defrost. Add honey to butter and stir well. • Pour over dry ingredients and mix well. • Add egg and mix again. • Pour crumbly mixture into glass oven dish. • Press the batter down well, compressing it into the dish. • Drizzle more honey over the top. • Bake for 25 minutes at 170ºC until golden brown. • Allow to cool until warm, and cut into squares. When cool turn out of dish. • Spread the squares evenly over a baking tray and place back into the oven at 100ºC. Bake until crisp (approx 40 minutes). Makes 40.
