1 cup caster sugar 2 large or x-large eggs 2 cups flour 1 cup desiccated coconut pinch salt 125g butter 1 tsp bicarb of soda 1 tsp vanilla essence 1 squeeze syrup
Mix together well (makes a sticky dough). Roll into small balls (smaller than a tsp - they spread out a lot) and place widely on a baking tray. Flatten them out.
Bake at 180ºC until the middle goes golden brown. (± 15 minutes) Take out of oven and remove from tray immediately.
(Makes huge amounts I would easily say 90 biscuits)
To make gluten free biscuits I did the same as above but substituted cake flour with 1 cup rye flour and 1 cup rice flour. But then these ones bakes a lot faster and had to come out after 8-10 minutes.
