Over the last month or two I've been harvesting my corn at different stages of development. to store frozen sweetcorn means picking the corn early (as soon as the silk is all pollinated and gone brown, and the cob feels full of kernels). Today was the final day of corn harvest in my yard, and I was delighted to still find fresh and succulent corn on the cob (which I removed by hand off the cob to freeze - to add to salads). I've already got bloody butcher corn in the sweet stage, blanched, cut off the cob, creamed, and frozen for sweet corn to add to risotto, stir fry, and soups. Some corn isn't as plump as it could be, and those cobs I'll dry and use to make cornflour. But today the biggest smile happened when I opened my blue popcorn! It's a small cob, but it's SO pretty! My strawberry popcorn is already harvested and dry (it dries so quickly), and I now have some bloody butcher corn ready to dry for next year's seed - (these are all heirloom varieties which are GMO free) Readying for winter we pruned the bay tree, guava tree, and cut down a weed tree - making more kindling, mulch, and firewood for winter, which inspired me to make an outdoors fire pit this weekend too. Nothing is better than sitting around a hot fire in the crisp darkness of winter, cooking in the great outdoors while also staying warm. I even boiled my water for coffee last night right on the fire. Gratitude come sin many forms, and my garden is an endless source of gratitude for me.
